I have a great recipe to share with you today – and a great giveaway to go along with it! Tilapia makes a great family meal because it’s easy to cook and easy on the budget, and these Baja Fish Tacos from McCormick Spices are delicious, easy, and fast!
I found this recipe at McCormick.com, and it’s ready in 15-20 minutes.
- 1 lb. Tilapia filets
- 2 Tbsp. vegetable oil
- 1/4 c. cornmeal
- 4 tsp. McCormick Chili Powder
- 1/2 tsp. McCormick Garlic Powder
- 3/4 tsp. salt
Cilantro Slaw Topping:
- 2 c. prepared coleslaw (your favorite recipe, or pick some up at the deli in your supermarket)
- 1/4 c. chopped fresh cilantro
Corn tortillas (8)
Stir chopped cilantro into your coleslaw, and refrigerate until ready to serve. Mix together cornmeal, salt, chili powder and garlic powder in a shallow dish.
Warm vegetable oil in a large non-stick skillet. Coat tilapia in seasoning mix.
Add fish to skillet and cook for 3-5 minutes each side, until golden brown and fish flakes easily. Cut filets in half and serve on a warm corn tortilla. Top with cilantro slaw. Serve with rice, Pico de Gallo, or whatever your family enjoys.
Makes 8 tacos (depending in the size of your filets).
My family loved adding a new meal into our rotation, and I loved having dinner on the table in just 15 minutes!
