Okay, TGIF. Seriously! It’s been a crazy week here! I’ve got a recipe to share with you today that’s both easy and fun to serve. I’ve got a few miniature dessert recipes still to share from my dessert party a couple weekends ago – I was a crazy baking woman, and they’re all recipes worth showing off! Bite size recipes are so much fun, and this one will show you how to make easy whoopie pies. The kids LOVED them, and I’ve got a printable page AND a printable recipe card for you today – just read on!
Now, I used an actual mini whoopie pie tin, but you definitey CAN drop these onto a baking sheet and cook them for a slightly shorter duration. I’ve just found that it’s worth my time to have invested in the pan. ;)
Another note? You can use your favorite box mix, if you like! It helps keep things easy! The hero of the recipe is really just the filling – so that’s all I’ve included here today.
- Your favorite cake batter recipe (or box mix)
- ½ c. softened butter
- 1-1/2 c. powdered sugar
- 1-13 oz. jar marshmallow fluff (about 2 cups)
- 1 tsp. vanilla
- Prepare your cake batter as normal, and drop by tablespoonfuls onto a parchment-lined baking sheet (or bake in whoopie pie tins) for 11-13 mins, until done.
- Cool fully on a wire rack, and beat together all filling ingredients.
- Prepare sandwich-style, and serve!
You can print the page above, or if you prefer an actual recipe card, I prepared this one for the party and I’m happy to share! Just print it on heavy cardstock and you can tuck it right into your recipe box.
Now… I am hoping the weekend is a time for relaxing and recharging around our household – whew! ArtPrize wraps up this weekend, and while I didn’t make it to the final round, it’s been an amazing (and time-consuming!) experience, haha.
