Good morning, and I have goodies for you today, friends! I put my head together with some of my favorite blogger friends, and we decided to have a Pinterest-inspired day today. So yes, that is Italian Beef. It’s been raining like crazy here, and we decided putting something in the slow cooker overnight would be a fantastic thing to wake up to. My husband used to live in Chicago, and one of the things he always raves about is Italian Beef! So after much searching, I finally landed at an Allrecipes.com recipe for slow cooker Italian beef.
After scanning ALLL the comments, and also wanting to stick with fresh ingredients (after all, I didn’t kill my herb garden this year, so I use fresh whenever possible), we made some tweaks. Okay, we pretty much adjusted every single measurement in the original recipe, but the majority of it is fresh substitutions (which aren’t teaspoon-for-teaspoon – so if you are using dried herbs, your best bet is to check out the original recipe).
I’ve never had true Italian beef so I thought it was great, but I couldn’t speak to authenticity. My husband? RAVED about it.
- 5 lb. rump roast
- 3 c. beef stock
- 2 packages (.7 oz.) Italian dressing seasoning
- 4 cloves garlic (pressed or finely chopped)
- 2 Tbsp. finely chopped white onion
- 1 tsp. salt
- ½ tsp. pepper
- ½ tsp. freshly chopped oregano
- ½ tsp. freshly chopped basil
- ½ tsp. freshly chopped Italian parsley
- 1 bay leaf (whole)
- In a saucepan, heat all the seasoning ingredients in the beef stock until just boiling.
- Put roast in slow cooker, and pour seasoned stock over it.
- Cook on low for 12 hours. You can cook it on high for about half the time, but the seasoning will work its magic best if you go low and slow. We just started ours around 10:30 at night, and had it ready for lunch the next day.
- When meat begins to fall apart easily, remove the bay leaf and shred. Save the juice for dipping.
- Serve on hoagie rolls or buns.
