Lemon Pie Bars

Ingredients
  • For the crust:
  • 2 c. flour
  • ½ c. powdered sugar
  • 1 c. softened butter
  • For the filling:
  • 4 eggs
  • 1½ c. sugar
  • ½ c. lemon juice
  • ¼ c. flour
  • 1 Tbsp. grated lemon rind/lemon zest
Instructions
  1. Preheat your oven to 350F.
  2. First - the crust. Using a pastry cutter, blend all 3 crust ingredients together until you have a nice dough. Press it into the bottom of a greased 9x13 pan and bake for 20 minutes, until it's slightly browned.
  3. While your crust is baking, beat together your filling ingredients. Beat on low speed for 1-2 minutes.
  4. When the crust is done, pour the filling mixture over the crust and return to the oven to bake for an additional 20 minutes - until the filling has set. A note here - it's easy to forget your pan is hot when you add the raw filling, so handle your pan with care. (Don't ask why I feel the need to point this out, LOL.)
  5. Cool completely, and sprinkle with a bit of powdered sugar if you would like. Cut into bars. If you are removing them from the pan and packing them to take somewhere, you should place a piece of wax paper between stacked bars.
