1 oz. raisins (an individually-sized box) - about 2 Tbsp.
½ c. sugar
1 tsp. cinnamon
Instructions
Preheat your oven to 350F and spray a muffin pan with cooking spray.
Open tube of biscuit dough and separate biscuits - cut each into 4-6 pieces.
Plump raisins by placing them in a microwave-safe dish and covering them with water. Microwave for 30 seconds, then drain and set aside.
Melt I Can’t Believe It’s Not Butter!® on medium heat in a small saucepan. Once completely melted, stir in brown sugar and heat for about one minute until sugar begins to melt and the mixture is well-blended. Remove from heat.
In a sealable bag, combine sugar and cinnamon.
Dip or stir biscuit pieces in the I Can’t Believe It’s Not Butter!® and brown sugar mixture until they are coated.
Toss coated biscuit pieces and diced apple pieces into the cinnamon-sugar mixture and shake until well-coated.
Place sugar-coated pieces in your muffin tin, alternating dough and apple slices. Periodically add raisins to each muffin cup.
Press each cup until well-packed, and bake.
For bread pan - bake 25-30 minutes. For jumbo muffins, 18-20 minutes, and for normal muffins, 14-16 minutes. Cool at least 10 minutes in pan before removing. Serves 6.
