Preheat your oven to 375F degrees. Line baking sheets with parchment paper. This recipe yields 4-5 dozen cookies.
Cream together sugars, eggs, vanilla and butter.
In a separate bowl, sift together flour and baking soda. Mix your flour mixture into your wet ingredients, adding a little at a time.
Stir in chocolate chips.
Drop by tablespoonfuls (about the size of a walnut) onto baking sheets.
Bake for 8-9 minutes. For soft, chewy cookies, you will need to remove them from the oven before they look totally "done" - as soon as the edges begin to brown. For a crisper cookie, bake one minute longer. You may need to adjust baking times based on the size of your cookies, and your altitude and weather pressure (yes, it makes a difference)!
