Seasoning to taste. I like 2 tsp. minced onion and salt and pepper.
Instructions
Preheat oven to 500 degrees and turn on your oven vent. (Sometimes oven-baking can get a little smoky and you don't want to set off the smoke detectors!)
Spray cast-iron skillet with cooking spray and heat it on the stove top on high.
Season your chops however you like. Sear them for 30 seconds per side.
Put the entire skillet into the preheated oven. Oven bake for about 16 minutes, turning your chops every 4 minutes. (For thinner chops, 13-14 minutes will be sufficient, but you still want to turn them frequently so they char evenly.)
Serve hot!
