One-Hour Roast Chicken and Rice and KitchenAid Mixer Giveaway

You guys know I am all about quick and easy around here – one hour or less.  (Emphasis on less whenever possible, of course.) Minute® Rice is one of the staples in our pantry, because not just quick and easy but also gluten free, so I’m thrilled to partner with them today to sponsor this easy meal idea that looks impressive but takes just one hour from kitchen to table!

I spotted a one-hour roast chicken recipe over at Suburble that has a cinnamon-sugar based rub that I had been wanting to try, and aside from getting a little bit dark in my oven (which may run a little hotter than hers) we found it to be a fantastic recipe, and one that we’re adding into our easy meal rotation from now on.  It does take a full hour to cook, but the prep takes five minutes or less, it was juicy and it had a sweet-salty flavor that my husband couldn’t stop eating, making this a perfect meal for weeknights or for anytime you want a REAL meal without putting much effort in.

To match the hint of sweet on the chicken without going overboard, I altered the basic Minute® Rice recipe slightly.  It’s still every bit as easy as traditional Minute® Rice, but it complemented the chicken perfectly!

Hint of Sweet Brown Rice:

  • 2 c. Minute® Rice Brown Rice
  • 1 1/4 c. water
  • 1/2 c. apple juice
  • 2 Tbsp. butter
  • 1/4 tsp. salt

You still make it according to the package directions; just mix the juice, salt and butter in with the water, bring it to a boil, then simmer the Minute® Rice for 5 minutes on low.  Turn off the heat and allow it  to rest for 5 minutes, then fluff with a fork.

I also steamed a side of green beans to balance out the meal, and all told, I was in the kitchen for less than 20 minutes – including basic cleanup.  And you know what?  If you really don’t have one hour to cook a chicken, then grab a rotisserie chicken from the deli on your way home, and you can make up your sides in just 10-15 minutes!

    I have a rice steamer at home but the classic white Minute Rice is the best thing to take camping! I love it with some (from a powder) black bean soup – light quick to cook and very filling after a day’s hiking.
