Smarter Ways to Indulge: Fiber One Cheesecake Bars

You know what I love?  Cheesecake.  Well, it’s on a long list of fabulous things in my life, but seriously, cheesecake.  It was the only thing I craved back when I was pregnant for my daughter, and it’s still my favorite dessert (and yes, I DID have cheesecake for my birthday last weekend, hehe).  But, let’s be honest, cheesecake is amazing, but it’s a far cry from health food.  When I can find a smarter way to indulge, I’m curious, to say the least.  I recently tried out Fiber One Cheesecake Bars, and I have to say – well done, Fiber One.  They’re a pretty amazing splurge for just 150 calories.

I tried both the strawberry and salted caramel flavors, and the texture and taste are both spot-on, and since it’s a Fiber One recipe, it’s also got 20% of your daily fiber.  So whenever you’ve got that sweets-craving (which always hits me about 3:00 in the afternoon – just about the time I’m sitting in the school pickup line), it’s a great way to indulge without all the guilt of the real thing.

We’re back in the swing of the school routine in just a few short weeks (and your kids may have gone back already I know a lot of schools have), and on the days where a sweets-fix is particularly tough to resist, I can grab an individually wrapped cheesecake bar and enjoy it by myself, in the few moments of quiet I get between my home office and collecting my kiddo from school.  If you’re a cheesecake lover, you know this is a big deal!  You don’t have to buy an entire cheesecake for just one snack, and it’s much cheaper than those pregnant days where I got one slice to go from a neighborhood restaurant for $8 – plus a tip.  And with Fiber One Cheesecake Bars, you don’t even need a fork.
