Mocha Chip Cookies

Oh my goodness, I have needed extra coffee this week.  How about you?  It’s so much so, that I’m even attempting new ways to get my caffeine fix.  Behold: Mocha Chip Cookies… perfect with a glass of iced coffee. :)

(I realize that *real* mocha is a type of bean, and not a mix of chocolate and coffee flavors, but Mocha Chip just sounds so much more yummy than Chocolate-Coffee-Chocolate-Chip.)

I found this recipe on food.com for Coffee Cookies, but I changed so many ingredients and measurements… I don’t really feel as though I can call it the same recipe.  Still – due credit for giving me a base to work with!

Recipe (yields 5 dozen cookies):

1 1/2 Tbsp. Instant Coffee
1 Tbsp. Warm Water
2 tsp. vanilla
2 eggs
1 c. shortening
3/4 c. brown sugar
1 c. sugar
2 – 1/2 c. flour
1/3 c. cocoa powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 package mini chocolate chips (you can use more if you really love them)

Preheat your oven to 325.  In a small bowl, dissolve your instant coffee into your vanilla and water.  You could probably brew up some espresso instead, but just take care that you don’t use more than 2 Tbsp. of coffee or your recipe will come out too wet.

Cream your eggs, shortening, and sugars together.  Sift in your flour, cocoa, soda, and salt.  Then, stir in your chips.

Roll into Tablespoon-sized balls, about the same size as a walnut.  Drop them onto parchment-lined baking sheets.  You can probably just grease your sheets instead, but I always use parchment so I don’t really know what adjustments to tell you to make sure your cookies don’t burn?

Bake for 16-18 minutes, maybe more depending on the size of your cookies.  Mine were done in 17 minutes, and I make them pretty small.  Just smell them… which is what my Gram always taught me to do.  Once they change smell and start smelling sweet, they’re nearly done.  They should look a little bit crackly.

Now, if you’re planning to enjoy these with the aforementioned iced coffee, start your coffee early – like well before your cookies.  Or the night before, for breakfast iced coffee.  I don’t really have a “recipe” per se, but my ideal ratio for iced coffee is for every 8 oz. of coffee, I add 1 oz. of milk, and 1 oz. of the really-bad-for-you liquid creamer.  Mmmm.  Pop it in the frig to cool off, and then pour it over ice when you’re ready for your pick-me-up.

(On another note, am I the only one who thinks my coffee pot looks like Darth Vader?  You may have to squint your eyes, like you just woke up.  I always feel like I’m bargaining with the dark side, like you give me coffee, and I will do your bidding…)

Dark Lords are forgotten, though, once you add a stripey straw – and enjoy an awesome mid-morning pick-me-up with a plate of cookies, and your coffee on the rocks!

    Oh man, these look fabulous! And the parchment paper (besides making it easier to clean up) also helps give them that awesome “tall and rounded” shape. I know from years of making cookies that flattened out and had sharp, crispy edges… :-( But apprently a Silpat or parchment paper changes something so they come out all nice looking! Thanks for sharing at The Fun In Functional!
