2-Ingredient Pumpkin Muffins

Well, the universe was sending me a message this last week, and that was to finally make the 2-ingredient muffins I keep seeing on Pinterest.

Mmmmm… now, that’s a great breakfast.

But back to the universe.

First of all, I finally ordered one of the Pick Your Plum grab boxes in June.  There were some super cute cupcake papers – like 300 of them, here’s one pack:

Awesome, right?  Except the day before I got my box, I found some really cute cupcake papers in the dollar bins at Michael’s!  Like… 300 of them.  So I currently have a stash of around 600 fun papers that looks like this:

So.  Cupcake and muffin time.  Stat.

I was also cleaning out my cupboards over the weekend, and discovered a cake mix in the back.  I thought, hmm, I wonder if that’s expired.  So I checked.

Nudge from the universe #2… uh, use this mix.  Immediately.  In your cute new papers.  Nudge #3 is when my friend Kate pinned it yesterday from Sweet Verbena.

OK universe, you win… fortunately, it was a win-win – the recipe is very simple, and it turned out great!

  • 1 box cake mix in your choice of flavor
  • 1 15 oz. can of pumpkin

Bake in papers or greased tins for 18-22 minute at 350 degrees.  Optionally sprinkle with powdered sugar.

Yep, that’s it!  My kind of recipe!

It makes a rather stiff batter, so it will cook a little bit lumpy.  They come out looking almost exactly how they went in.  The above photo is before cooking, the below photo is after.

I did dust mine with powdered sugar.  I’m not normally big on making my baked goods fancy, but it goes so far toward presentation, and a little powdered sugar is easy to do.

As far as how they taste – let me say, they are quite good.  Not as delicious as Panera, and the texture is a little bit spongy.  But they have no egg, for those who can’t have egg, and no oil, so making them up this way is a lot more diet-friendly, for those of you watching it.  And they are SO easy.  So overall – totally worth it!  I’ll definitely use this recipe again!

    I make these anda dd a little pumpkin pie spice which I guess makes them three ingredients. I use a spice or carrot cake mix and then back to 2 ingredients as the spice is already in the mix. I regards to the outdated cake mix I still use them providing I am sure they have no weevils or bugs. I add a little baking powder to ensure I still get some rising power.

    I make these same muffins using a Devil's Food cake mix. They are dense and chocolatey and nearly guilt-free. I usually do add a sprinkle of semi-sweet chocolate chips in for a little gooey goodness in the middle. You can't taste the pumpkin at all! Delicious!

    Those are yummy! My friend gave me the recipe a few years ago. We make the pretty often. You can also use the same recipe to make cookies.

    I have something like this pinned from last fall but never got around to making it. I did buy a bulk pack of pumpkin from Sams earlier this year- I need to break it out and do this! Looks yummy!

    Yummy!! I love pumpkin and these are SO easy! I think I have the ingredients in my cupboard. I don't have the cupcake liners.:( Oh well I bet they still taste good.:)
