Create a Fiesta in Under an Hour with RO*TEL Rockin’ Guac

Well, I think we’re finally shaking off the last of the snow here in Michigan (it snowed here last week, hopefully for the last time this spring) and I’m SO excited to finally move into warmer weather living!  It’s still unpredictable around here until at least June, so Michigan weather means being flexible.  But on a nice sunny afternoon, it’s fun to call up a few friends and have them come for a little Cinco de Mayo fiesta, and when I say little, I mean you can put together an entire party in under an hour with this great guacamole recipe from RO*TEL!

You guys know, I keep things as easy as possible.  An hour or less – it says so all over my blog, after all!  But I do love making great recipes – I just want them to be quick.  RO*TEL’s Rockin’ Guac delivers on both counts, making up in just minutes with some ripe avocados and Original RO*TEL tomatoes and chilies.  You don’t even have to dirty your mixer – you can actually just make this up with a spoon and fork!  (Well, and a can opener, haha.)

You can visit the RO*TEL site for the recipe, or you can check out this quick video I put together on how to make RO*TEL’s Rockin’ Guac.  It’s one of those recipes that’s so easy, it practically makes itself.  You can put together even an impromptu party in no time at all!

Even if you don’t keep avocados on-hand and need to make a quick run to the store, you can still get the party started in an hour, because prep, cleanup, and party setup will only take about 10 minutes!  Be sure to add Bud Light Lime-A-Ritas to your spread for all the flavor of a margarita – right in a can.  No mixing, no blenders, no salt rims – they’re the ultimate easy beverage for your spur-of-the-moment fiesta! Pick some up on your shopping run, and don’t forget to grab some bright paper plates and napkins to keep cleanup easy, too.
