Take your chicken breast, flatten it out and cut it in half. I beat mine with a potato masher to make it thinner. Is beat the right word? I pounded it flat? Im not sure the proper cooking term. Haha.
I layered artichoke hearts, bell peppers and cheese on the chicken breast and then rolled it up. I rolled the chicken in bread crumbs and then used skewers to hold the meat in place while cooking.
I placed them in a dish and baked the chicken for 45 minutes at 350.
These turned out so delicious! I love all things Italian (Im half Italian and half Czech) and these defiantly hit the spot! The fun thing about chicken is that you can experiment and create your own version. If you dont like artichoke hearts [not many people do.. I love them!] you can replace it with something else. Like more cheese. Hmmm… cheese.
