Italian Stuffed Chicken from The Grant Life

Good morning!  As many of you have probably read – my dad passed away last Thursday.  So that I could be with my family this weekend and take a little break, my friend Kelley from the Grant life sent me the blog-equivalent of a hot meal: this easy and delicious recipe for my readers!  (Kelley – thanks so much for sharing, and on such short notice – I really appreciate it!)

Hi Happy Hour fans!  My name is Kelley and I blog over at the Grant life.  Over there I share crafts, recipes, a weekly link party and tons of stories about babies.  I love diet Coke, How I Met Your Mother, twitter and rainy days where I can snuggle with my babies.  
Im super excited to be here today!  Im going to share a simple recipe that will jazz up a plain chicken breast.  Oh and its easy and quick.  A busy day with two toddlers means these are a few of my favorite things!  
Italian Stuffed Chicken
What you’ll need:
Boneless skinless chicken breasts 
Artichoke hearts 
Marinated bell peppers
Bread crumbs
Mozzarella cheese

Take your chicken breast, flatten it out and cut it in half.  I beat mine with a potato masher to make it thinner.  Is beat the right word?  I pounded it flat?  Im not sure the proper cooking term.  Haha.

I layered artichoke hearts, bell peppers and cheese on the chicken breast and then rolled it up.  I rolled the chicken in bread crumbs and then used skewers to hold the meat in place while cooking.

I placed them in a dish and baked the chicken for 45 minutes at 350.

These turned out so delicious!  I love all things Italian (Im half Italian and half Czech) and these defiantly hit the spot!  The fun thing about chicken is that you can experiment and create your own version.  If you dont like artichoke hearts [not many people do.. I love them!] you can replace it with something else.  Like more cheese.  Hmmm… cheese.
