Holiday Baking: Cranberry Walnut Oatmeal Cookies

Are you doing your holiday baking already? I am! We have events from now until Christmas, which means I have lots of baking and cooking to do.  Today, I want to share with you one of my favorite Christmas cookie recipes: cranberry walnut oatmeal cookies.

This time of year, the best recipes call for real butter!  I’m all stocked up after my last trip to Walmart.  (Well, enough to last us through Thanksgiving, anyway.  Heh.)

I usually buy Land O’Lakes butter – I even keep a tub of their spreadable butter in the refrigerator at work for the days I make a baked potato for my lunch.  (Hey, just because I’m stuck at the office doesn’t mean I shouldn’t still have real, hot food at lunch – it’s so much better than a fast food run!)  It’s such a staple that I rarely even think about just how many of my family’s favorite recipes taste great with real butter.

This recipe is one I love making around the holidays – cranberry is such a festive addition this time of year.  (Now, if you don’t love cranberries, you can substitute raisins for a more classic flavor, and of course, you can omit the nuts too to suit your family’s tastes.)  The pop of red looks great on cookie trays – and especially if you do cookie swaps, oatmeal cookies are always under-represented!

Holiday Baking: Cranberry Walnut Oatmeal Cookies

Ingredients
  • 2 sticks (1 cup) Land O'Lakes Butter, softened
  • 1 c. sugar
  • 1 c. brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 c. flour
  • 3 c. quick cook oats
  • 1 tsp. baking soda
  • 1 tsp. salt
  • ½ tsp. cinnamon
  • 1 c. dried cranberries (I just use a whole 5 oz. package)
  • 1 c. chopped walnuts (optional)
Instructions
  1. Preheat oven to 375F.
  2. Cream together butter, sugars, eggs, and vanilla.
  3. In a separate bowl, sift together flour, salt, cinnamon, baking soda and oats.
  4. Stir your oat mixture into your wet ingredients a little at a time until well-blended.
  5. Stir in cranberries and walnuts.
  6. Drop by tablespoons onto a baking sheet lined with parchment paper. (About the size of a walnut.)
  7. Bake for 8-10 minutes. Baking times will always vary with your altitude and weather pressure, so keep a close eye on new recipes to find the ideal baking time for your oven! Less cooking time will yield a softer and chewier cookie - if you prefer your cookies more crunchy, try baking them on the longer side. This recipe yields 3-4 dozen cookies.
