Honey Glazed Carrots

I don’t share a lot of side dish recipes – they just don’t “wow” like main courses do and they aren’t as convenient as one-dish meals like casseroles, either.  But this recipe for is a really simple side dish that gets requested a lot when we actually cook dinner!  It’s super easy, too – just toss and bake!

Prep time: 5 mins
Cook time: 40 mins
Total time: 45 mins

Ingredients
  • 1 lb. baby carrots
  • 2 Tbsp. butter
  • 2 Tbsp. honey
  • 1 tsp. thyme
Instructions
  1. Preheat oven to 350F.
  2. In an oven-safe casserole dish, combine ingredients. You don't even need to worry about it being well-coated to start.
  3. Cover and bake for about 10-15 minutes, remove from oven, and stir thoroughly. Put back in the oven for an additional 30-35 minutes.
  4. Serve hot!

    Adrianne, I bet these are so good! I absolutely love oven roasting or baking vegetables…..especially in the winter!
