Low-Cal Spiked Lemonade

Well, my husband and I have had the first part of the week off, and being home with Kevin and Raya meant I didn’t get anything really crafty done since last week. ;) (I’m not sad at all, it’s been SO nice!!)  It does mean that my share today is going to be a very simple one, though.

Once we got home from our weekend getaway, we till felt like celebrating, but the last thing I felt like doing is running out to the store after baby bedtime.  So I made us up a little batch of spiked lemonade.  I just used a sugar-free drink mix to make it, and I am surprised at how good it was – I will definitely be making this again!  The key is to short the mix by as much water as you’re adding alcohol, to keep the yummy lemonade flavor.

1-1/2 oz. vodka
1/2 oz. triple sec
14 oz. water
3/4 tsp. drink mix – if you buy the singles, you can just use one of those, otherwise it’s 1/4 of a 2-quart sized mix

If you decide to just mix up a full 2 quarts for a party – you can use 3/4 cup vodka and 1/4 cup triple sec, and fill the rest of your pitcher with water.

It’s pretty much the last hurrah for summer around here (and my last vacation day for the year), so I’m going to take advantage of the last of the lemonade weather – fall is just around the corner! ;)
