Are you doing a happy dance about this fabulous spring weather?  It has finally, finally arrived here in Michigan, and I’m looking forward to time on the deck with family and friends.  And, as you know – I keep things simple around here.  Hour or less… and the lesser, the better!  Seriously – I opt for those ridiculously easy recipes whenever I can.  And today’s guacamole recipe is one of them!

I tried RO*TEL’s Rockin’ Guac recipe, and it seriously couldn’t be easier.  It makes up in minutes, right in your serving bowl, so if you have drop-by company, it’s a perfect easy dip to serve.  Even if you’re planning your spring get-together in advance, it’s a great way to spend less time in the kitchen for prep or for clean-up, and more time out on the deck with your friends!

    I love to make my own guacamole! Do you use a food processor to make yours? I don’t have a food processor so I mash it up by hand. My dad likes the chunky texture but I prefer smooth.

      Thanks!“Now that the fourth Demonsouled book is out, do you imagine it will be months or years before the ne#x2&t8?21;I’m hoping to have it done before the end of 2012. I have to first write a short nonfiction project, and then GHOST IN THE STORM. So I’m hoping to start on SOUL OF SORCERY by the summer.
