Shrimp Salad on Endive Leaves

I have a good friend of mine today, ChiWei from One Dog Woof, here to share one of her favorite simple appetizer recipes with you!

I LOVE reading at One Dog Woof.  ChiWei has great ideas and gorgeous photography for crafts and recipes.  She also finds a way to share recipes that impress while also looking totally do-able!  Check out this fabulous Mango Shrimp Salad hors d’oeuvre recipe!

Shrimp Salad on Endive Leaves
Ingredients
  • 1 bag of medium shrimp
  • 1 semi-ripe mango
  • 1 lime
  • a small bit of red onion
  • handful of cilantro
  • evoo (Extra Virgin Olive Oil), salt and pepper
  • 3 Endives
Instructions
  1. Poach (boil) the shrimp for a couple of minutes until pink. Then let it cool. Dice the shrimp, the mango, the red onion and mix together. Add the juice of one lime, a handful of chopped cilantro. Throw in a couple of tablespoons of evoo, and season to taste with salt and pepper.
  2. Tip: Like salsa, this tastes better after it sits and the juices mix a bit.
  3. Dollop a bit of the salad onto each belgian endive leaf and arrange in a pretty pattern.

Meanwhile, I miss getting into the kitchen and the craft room myself much for these first couple weeks, but I am LOVING being home with my babies!
