Slow Cooker Chicken Tacos

Good morning!  I have a super easy meal for you to add to your rotation… so easy, in fact, that my husband is actually the one who made these on his day off yesterday, and had dinner on the table when I came home from work!  Making chicken tacos in the slow cooker is one of our go-to recipes when we’re burned out on cooking.

In fact – the hardest part about the recipe is chopping up a few toppings to go along with it – the chicken pretty much makes itself. ;) You can also multiply the recipe as needed for a larger crowd, and it makes for great leftovers too!

Slow Cooker Chicken Tacos

Prep time: 5 mins
Cook time: 4 hours

Ingredients
  • 1 lb. boneless skinless chicken breasts
  • 1 packet of taco seasoning (or ¼ c. of your own blend, if you are averse to pre-packaged seasonings)
  • Taco toppings like lettuce, tomatoes, shredded cheese and/or sour cream
  • Flour tortillas
Instructions
  1. Place chicken in the slow cooker on low, and sprinkle taco seasoning on top. Cook for 4-6 hours, until chicken is tender.
  2. Prepare your toppings.
  3. Shred chicken with forks. Serve hot on flour tortillas.

    I tried this recipe tonight and OMG it was so delicious my whole family loved it and asked for more. The only thing I had to do different was add 1 cup of water and cooked it on low for 8 hours just because I was gone for 10 hrs.

    Do I need to add any liquid to the crockpot?

      I add up to 1/4 cup of water if I have to start it on high, but it turns out better starting it on low with no water for me. The juice from the chicken is sufficient. I know on the stove top you have to add water, but keep in mind that’s a much higher temperature and you cook most of that water off that way. The slow cooker retains the moisture!

    This recipe is good too if you add in a jar of salsa with the taco seasoning and chicken. It will come out even juicier and flavorful. I added this into our meal rotation too. Shelly

    What an amazing husband you have! My family would gobble these right and even go for seconds AND thirds even if they were full… I’m surrounded by all boys. So, they will just keep eating until it’s gone. Love how easy this is. Yum!
