Cocktails & Mocktails: Raspberry Acai Mojitos

Now that I’m a parent, girls’ night has changed.  I feel like it’s a good change!  These days the best way to enjoy some great company is to have a girlfriend or two over.  Sit on the deck and enjoy the spring weather.  Make up a crisp and fruity drink.  Watch our children run wild in the yard and get dirty.  Must mean I’m growing up… at least a little bit.  You all know I love a fabulous cocktail, but at the same time, when it’s 2:00 in the afternoon (with 3 loads of laundry waiting after my girlfriends go home), I’d really prefer a lighter version.

That doesn’t mean we don’t still do it right, though.  Mocktails can still be fabulous.

I have a pair of recipes for you today for a twist on the classic mojito – so no matter how you like to celebrate girls’ night in, you can serve up something delicious with fresh fruit, mint, and Trop50’s new Raspberry Acai flavor juice (which has half the sugar and calories of regular juice).

Raspberry Acai Mojito Mocktail

Ingredients
  • 2 lime wedges
  • 2 raspberries (and/or blackberries)
  • 6-8 mint leaves
  • 4 oz. Trop50 Raspberry Acai juice
  • 1 oz. club soda
  • Ice cubes
Instructions
  1. Squeeze lime wedges into a highball glass, and fill ½ to ¾ with ice.
  2. Add mint leaves, berries, juice and 2 ice cubes to a shaker tin. Shake to chill and combine.
  3. Pour into glass, and top with club soda. Garnish with a sprig of mint and additional berries, as desired.

If you’re lightening up, this is a fun way to enjoy a fancy drink.  Because, let’s be honest, we ladies still appreciate that, don’t we?? :) I love the mint and berry combo.

Now, if you  prefer a more adult version, this twist on the classic mojito doesn’t disappoint.  It’s got the same crisp flavors as the mocktail (with that little extra kick).

Ingredients

  • splash of soda water (1/2 oz.)
  • Ice cubes
Instructions

  2. Put 2 ice cubes into a shaker tin, and add mint leaves, berries, juice and rum. Shake until chilled.
  3. Pour over ice into glass, and add splash (1/2 oz.) of soda water.
  4. Garnish with sprig of mint and additional berries, if desired.
